Twenty years after opening his flagship restaurant Craft, Tom Colicchio has opened his first-ever Italian restaurant Vallata on the same block.

The trattoria, located on 19th Street between Broadway and Park Avenue South, serves an ever-changing menu that reflects the season's best flavors, all inspired by a year of home-cooked meals.

 

"There has always been some Italian influence that creeps into my cooking. When the lockdowns started, I found myself making three meals a day for my family. I was inspired by the simple, straightforward cooking that I was doing for them and wanted to share my version of hyper-seasonal trattoria-style cooking with my NYC neighbors, so we created Vallata," explained Colicchio.

The current menu includes fresh favorites like heirloom squash with scallions, red onions, and basil – all sourced from the nearby Union Square Greenmarket – as well as hand-rolled cavatelli, cod, and cannoli bombolone.

Come early for the Aperitivo Hour or sip from the restaurant's wine list, a "little love note to regional Italia," said Natalie Grindstaff, Director of Beverage Programs for Crafted Hospitality.

 

As the pandemic comes to an end, Colicchio’s efforts to re-stake his claim on Gramercy has never been stronger. To that end, Chef Colicchio and the entire team at Craft and Vallata are committed to building and strengthening the relationship with Beam Living's residents and communities in NYC.
