As the days become a bit chillier, what better way to warm up than with a mug of homemade hot chocolate. I know what you are thinking, why would I make something like hot chocolate totally from scratch rather than just get a mix from the store?! Honestly, mixes are great, I am a huge fan, but sometimes you want something a little more luxurious and comforting than just a packet from the store.
This recipe has only a few more steps than a mix and the flavor really speaks for itself. It serves 2 but can easily be doubled (or quadrupled, if needed) to serve a larger crowd. You can even make it ahead of time in the crockpot and have it ready with optional toppings to add. This is a great recipe to have ready for when the kids come home after a super cold day at school or out in the snow.
I like to serve my hot chocolate with an excessive amount of marshmallows or, if I am feeling really extra, whipped cream. Let me know how you take yours!
Ingredients
- 2 cups milk
- 2 tablespoons cocoa powder
- 2 tablespoons sugar
- ¼ cup chopped dark or semi-sweet chocolate (or chocolate chips)
- ⅛ teaspoon vanilla (or just a tiny dash if you don’t have that size measuring spoon)
- Dash of salt to taste
Directions
- In a small-to-medium-sized saucepan add the milk, cocoa powder, and sugar. Place over medium heat, stirring occasionally.
- Once the milk mixture has started to simmer, add in the chopped chocolate stirring constantly until the chocolate is fully incorporated (no lumps and no streaks), this will take a few minutes.
- When you no longer see lumps of chocolate, add in the vanilla and salt and let the mixture come back up to a simmer.
- Your hot chocolate is now ready to serve! You can serve immediately, let it hang out on the lowest setting for a bit, or pop into a crockpot and serve later.
Makes 2 servings.
